This BBQ Chicken Club Sandwich is anything but ordinary, oozing with cheese and layered with chicken ham, egg and the stellar pulled, barbequed chicken. An extra dose of BBQ sauce, gives the mix that sweet-hot woody kick. Accompanied by golden-fried potato wedges, you don't want to miss out on this flavoursome experience!

 

Ingredients

Bbq roast chicken

Whole chicken with skin - 1

Bbq sauce - 30gms

Chopped garlic - 5gms

Chopped coriander - 10gms

Lemon juice - 10ml

Fresh chopped red chilli - 2gms

Salt

Refined oil - 5ml

Crushed black pepper - 2gms

 

Bbq chicken mix(filling)

Pulled bbq chicken - 65gms

Bbq sauce - 5gms

Chopped coriander - 10gms

Salt

Crushed black pepper

Mayonnaise - 3gms

Fresh chopped red chilli - 1gm

Lemon juice - 10ml

 

For the slaw

Julienne, purple cabbage - 10gms

Julienne, carrot - 15gms

Julienne, white cabbage - 10gms

Chopped pineapple - 15gms

Chopped jalapeno - 2gms

Mayonnaise - 10gms

Crushed black pepper

Salt

 

Method

Special Instructions: Use whole chicken with the skin for roasting. Use of mayonnaise is just to bind the slaw or chicken. Avoid excessive use of mayonnaise.   

1. Marinate the chicken with the mentioned ingredients and let it rest for an hour.

2. Roast chicken at 180-degree Celsius for around 45 minutes. Check if the chicken is cooked well before removing from the oven.

3. Once the chicken is roasted, let it cool. Remove the skin of the chicken and pull the chicken meat from the bones.

Make the slaw with the mentioned ingredients.
