Apple Corn Sprouts salad

Ranked quite high among the list of energy boosters, the light, crunchy and wholesome sprouts salad will always remain an all-time favourite! Mixed sprouts, coloured peppers, zucchini, English cucumber, tomato, red cabbage, sweet corn kernels and – the star – diced juicy apples, are seasoned and tossed with earthy cumin powder. Cumin-flavoured and jalapeño-riddled coriander vinaigrette, earthy and tangy, accompany the crunchy-munchy salad.
Ingredients
Mixed sprouts 3 types, boiled – 80gms
Capsicum, red (small dices) - 20gms
Capsicum, yellow (small dices) - 20gms
Capsicum, green (small dices) - 20gms
Zucchini, yellow (small dices), blanched - 25gms
Zucchini green, (small dices), blanched - 25gms
European cucumber (English), small dices - 40gms
Sweet corn, roasted - 30gms
Apple, Red (Washington Apples), small dices - 50gms
Tomato small dices - 25gms
Cabbage red, chopped - 15gms
Salt
Lemon juice - 2.5gms
Cumin powder - 1gm
Black pepper
Coriander vinaigrette dressing
Vinaigrette dressing - 50gms
Coriander leaves, chopped - 5gms
Cumin powder - 1gm
Jalapeno sliced - 2.5gms
Method
We have to use at least 3 variety of sprouts. Boil them and keep it aside
In a bowl take boiled sprouts, add zucchini, bell peppers, roasted corn kernels, tomato, diced cucumber, cabbage, apple, salt, pepper, cumin powder, lemon juice and toss. Adjust seasoning.
Place the tossed salad in a container.
For the dressing, mix all the ingredients mentioned pour it in a container.
Serve the salad along with the dip.
