Tomato Basil Soup

Making soup is an art that involves layering of flavours. This one is a beautifully crafted sweet tomato soup simmered with carrots, celery, garlic and fresh Italian basil leaves.



Red ripe tomatoes (halved) - 2kgs

Sliced onion - 150gms

Sliced carrot - 200gms

Celery - 50gms

Garlic - 15gms

Tomato paste - 200gms

Oil - 50

Water - 3litres

Butter - 30gms



Heat oil in a vessel. Sauté onion, garlic, celery and carrot till fragrant.

Take any pressure cooker, add the halved tomatoes in it and all other ingredients except the butter and basil pressure cooker and cook on medium flame ten minutes. Reduce the flame and cook for 2 hours.

Take the ingredients out of the cooker and grind it to form the soup base and strain out the extra liquid.

Adjust seasoning and bring to a boil. Skin the froth from the surface and set aside. Add the basil, while soup is hot. Add butter, the shredded basil to the soup and serve.
