Food website fooddive.com predicted that Summer 2018 will be a season of indulgence. Cheese, butter and whole milk are slowly inching their way back into our diets and people aren’t avoiding these delicious foods anymore. This is great for the Indian diet, as we pretty much eat a milk product at every single meal!

Here’s a low down into some of our indulgent cheese-based products that you can totally try every single time those summer cravings hit.

 

Mushroom Thyme Mac ‘n’ Cheese

Had the then American president Thomas Jefferson, smitten with pasta and sauces, not returned from Italy with a contraption to make macaroni, and served ‘Mac and Cheese’ at the state dinner in 1802, Americans would have known a different comfort food! Your bowl of mac and cheese becomes more scrumptious with delectable pair of mushroom and thyme in it. Sautéed button mushrooms, shiitake mushrooms and al dente macaroni are folded into a cheesy, thyme-infused béchamel, topped with cheddar and baked until a golden crust blankets this delight.

 

Cheesy Potato Sausage Soup

A cheesy twist to an invention conceived either by the humble housewives of Ireland or a German prisoner-of-war who supposedly floored King Louis XIV, Marie Antoinette and Benjamin Franklin with his delicious potato soup. Boiled and pureed potatoes and garlic form the base of what is to become a creamy soup that is finished off with a luscious cheese sauce, diced, sautéed frankfurters and bell pepper. Back in old-Texas ‘fajita’ was a term used to describe the cheap cut of meat. It wasn’t until the 70s that ‘fajita’ was used to describe all sorts of grilled meat, seafood or even vegetables wrapped in tortilla bread. If you feel particularly ‘Mexican’ and ‘vegetarian’ at the same time this day, our Tex-Mex Fajita Bowl is just what you need. Paneer steak marinated with jalapeño, chillies, coriander and cumin is grilled and served on a bed of lemon-coriander rice.
