Hunan Chicken Wonton Soup

The Chinese OWN soup! Nobody does a soup as well as they do. This drool-inducing wonton soup is definitely high on the list of soups that you’d want to dig into. A spicy chicken broth loaded with shiitake mushrooms, bok choy and chicken stuffed wontons. We don’t think this will leave you wont-ing. Get it?

 

Ingredients

 

For the fried wonton

 

Oil for deep-frying

Wonton sheets - 6

Minced chicken - 300gms

Spring onion chopped - 20gms

Ginger chopped - 5gms

Salt

White pepper powder

Light soya - 4ml

 

For the broth

 

Chili oil - 10ml

Garlic chopped - 8gms

Dark soy sauce - 15ml

Light soya - 8ml

Spring onion chopped - 10gms

White pepper powder - 6gms

Chili paste - 50gms

White vinegar - 25gms

Aromat seasoning - 8gms

Diluted corn flour - 40gm

Chicken stock

 

For the vegetables

 

Shitake mushroom chopped - 100gms

Carrot chopped - 300gms

Bok choy,  chopped - 200gms

Chinese cabbage - 200gms

Tomato, chopped - 200gms

For garnish, chopped spring onion - 10gms

 

Method

 

For the fried wonton

    

1.Take a clean bowl, add minced chicken, chopped spring onion and season it well. Add chopped ginger and light soy.

2.Take fresh wonton sheets fold, add the filling and deep fry till golden brown in colour.

   

For the chicken broth.

  

3.Heat a wok, add chilli oil, chopped garlic and stir-fry for few minutes. Next, add the chilli paste and the vegetables, finally pour in the chicken stock and let it simmer.

4.Add the sauces, adjust seasoning and let the broth continue to simmer for a while. Add diluted corn flour to thicken the soup. Garnish with chopped spring onion and serve.
