Teriyaki Chicken Rice Bowl

The mighty Shoguns of Tokugawa family, who ruled Japan in the 1600s, are credited for developing teriyaki, a cooking method whose result is stunningly dark, caramelized meat. Our Teriyaki Chicken Rice Bowl is an enticing meal you’ll easily surrender to. You’ll see! Diced, grilled chicken, leeks, broccoli, bell peppers, carrot and Chinese cabbage are seasoned, sautéed and simmered in a rice-wine vinegar infused teriyaki sauce, for you to do the honours… go ahead, gobble it up with a portion of the humble white fried-rice. Serves 1.You’ve tasted it. You’ve loved it. Now, here’s how you make it!

 

Ingredients

Chicken Leg (deboned): 1

Marinade for the Chicken

Ginger (chopped): 1 teaspoon
Garlic (chopped): 1 teaspoon
Teriyaki Sauce: 1 teaspoon
A pinch of Salt and Pepper

For Rice

Ginger (chopped): 1 teaspoon
Garlic (chopped): 1 teaspoon
Onion (chopped): 1 teaspoon
Leek (chopped): 1 teaspoon
Carrot (chopped): 1 teaspoon
Red, Green and Yellow Peppers: 1 teaspoon each
Light Soy Sauce: 1 teaspoon
Boiled Rice: 1 cup
Oil: 1 tablespoon
A pinch of Salt and Pepper

For Teriyaki Sauce

Ginger (chopped): 1 teaspoon
Garlic (chopped): 1 teaspoon
Assorted Onion, Leek, Carrot; Red, Green and Yellow Peppers: ½ cup
Teriyaki Sauce: 3 tablespoons
Dark Soy Sauce: 1 tablespoon
Light Soy Sauce: 1 tablespoon
A pinch of Salt and Pepper

Garnish
Spring Onion (chopped): 1 teaspoon
A pinch of Sesame Seeds

Grilled Chicken

Combine the chicken with the marinade and allow it to rest for an hour. On a hot plate, grill both sides of the chicken until done.

Mixed-Veg Rice

Heat oil in pan, and sauté ginger, garlic and onion. On high flame, toss in the leek, carrot and peppers, boiled rice, season with salt and pepper and finish off with light soy sauce.

Teriyaki Sauce

Heat oil in pan, and sauté ginger, garlic and onion; followed by leek, carrot and peppers. Add the Teriyaki sauce, dark soy sauce and light soy sauce, season with salt and pepper and allow the veggies to simmer.

Over a bed of fried rice, place sliced, grilled chicken, pour a ladle of the gravy and garnish with toasted sesame seeds and spring onion.
