3-Bean Quinoa Chicken Salad

Goodness comes in threes, we say. Try a portion of our 3-Bean Quinoa Chicken Salad and you’ll know what we mean. Packed with the essential quinoa, sliced roasted chicken, red kidney-beans, black-eyed beans, haricot beans, crunchy peppers and lettuce, seasoned and served with an olive-mustard vinaigrette, this salad is all about healthy and tasty tossed into a single bowl! Serves 1.

Ingredients

Boiled channa – 25gms

Haricot beans – 25gms

Red pepper – 15gms

Yellow pepper – 15gms

Chopped onion – 15gms

Sliced roast chicken – 80gms

Iceberg lettuce – 40gms

Boiled quinoa – 25gms

Olive oil – 10ml

Salad oil – 15ml

For the lime vinaigrette

lime juice – 100ml

Salt

Pepper

Chopped parsley – 3gms

Minced garlic – 10gms

Dijon mustard – 20ml

Lime zest

Method

1. Cut up the French beans, boil in salted water and let it cool. cut peppers into neat dices. Chop onions.

2. Mix the rest of the ingredients together, toss in the French beans, peppers and onions.

3. Add olive oil, salad oil and toss the salad. Finish it off with the lime vinaigrette and serve.
