Keto Peri-Peri Chicken Salad

Here’s how you turn an ordinary chicken salad into an extraordinary indulgence – bring in the peri-peri we say! The African chilli that has lent its heat to many a roast, stars here too! Peri-peri-marinated chicken breast seared and baked in an oven until done well, is diced while still moist, tossed with cucumber, cherry tomatoes, olives, mint, basil and jalapeño and is served with a flavourful garlic-yoghurt sauce – go on… dress the salad and dig right in!



Chicken breast – 140gms

Garlic (chopped) - 3



Peri-peri spice powder – 5gms

Dry Thyme


Cucumber (triangles) – 40gms

Bell peppers (triangles) – 20gms

Cherry tomato (cut in half) – 15gms

Black olives (cut in half) – 10gms

Jalapeno – 10gms

Mix lettuce – 20gms

Mint leaves - 1gm

Basil leaf - 1

Olive oil – 5ml

For the dressing

Hung curd – 30ml

Garlic (chopped) - 2



Olive oil – 5ml

Parsley - 0.5gms



1. Thaw and clean chicken breast. Marinate with peri-peri spice, salt, pepper, chopped garlic, oil. Let it marinate for a while.

2. Sear on a hotplate, cook in oven till done. Ensure you do not overcook the chicken. Cut in even dices and set aside.

3. Take the cucumber and bell peppers, cherry tomato, olives and jalapeno and mix in with the rest of the ingredients. Mix the ingredients required for the dressing.

Garnish it with mint and basil leaves and serve.
