A flavourful tempering of cumin, asafoetida, dried red chillies and curry leaves invites ginger, garlic, onion, tomatoes and powdered spices. Mixed sprouts and peanuts are folded in, and simmered before diced, fried potatoes are tossed in and finished off with lime juice. A mildly-spiced veggie pulao and spiced and crumb-fried aloo-paneer tikki accompany the usal.
