Roasted Sausages 'n' Hash Browns

Tucked away quietly between sliced hot-dog buns, frankfurters or chicken sausages have in fact made their way to space with the astronauts on the Apollo 7 mission in 1968! Here we like to slice and sauté them with caramelised onions, toss them with a dash lemon juice and pepper and serve them hot with crispy, golden-fried hash browns. How about this dish for a delicious breakfast? 

 

Ingredients

 

For Sausages

Oil

Chicken frankfurters sliced - 200gms

Onion (sliced) - 1

Chopped parsley - 0.5gms

Salt

Crushed pepper

Lemon juice - 4ml

 

For Hashbrowns

Boiled and grated potato - 80gms

Mirepoix - 10gms

Chopped parsley - 1gm

Grated nutmeg - 0.25gms

 

For the batter

Flour - 20gms

Corn flour - 10gms

Water

Panko orange crumbs - 30gms

 

Method

For the sausages

Heat oil in a pan, add sliced onions and sauté it. Add the sliced sausages and toss well Adjust seasoning and garnish with chopped parsley.

For the hash brown

Mix the grated potatoes with chopped parsley, mirepoix and adjust seasoning. Add grated nutmeg and mould it into a circular patty. Make a batter by using flour, corn flour and water. Dip the patties in the batter and then cover it with completely with orange panko crumbs. Deep-fry in hot oil till crisp.

Serve with the roasted sausages and a dipping sauce of your choice.
