RECIPE A DAY | FRUIT SANGRIA PANCAKE

The most important meal of the day needs to be special and what's more special than having pancakes for breakfast! Soft, fluffy pancakes are doused with cream cheese, diced fruits, and drizzled with smooth chocolate sauce. Skipping breakfast will be a thing of the past!

Ingredients

Pancakes

Refined flour - 500gm

Eggs - 1

Sugar - 100gm

Buttermilk - 50ml

Vanilla pod - 2gm

Butter- 50gm

Baking soda - 1gm

Milk - 200ml

 

For the Fruit Filling

Grape Juice - 200gm

Sugar - 5gm

Red Wine - 20ml

Cinnamon Stick - 1

Chopped Green Apple - 30gm

Chopped Red Apple - 70gm

Pomegranate - 10gm

Sweet curd - 70gm

Chocolate Sauce - 20gm

Chopped Almonds - 5gm

Chopped Cashews - 3gm

Icing Sugar

 

Preparation Method

Pancakes

Mix all the ingredients together with melted butter and set aside for half hour.

            On a buttered hot skillet pour a ladle of the batter, cook for 3 minutes and flip to cook on the other side.

Once golden brown, remove from skillet

Repeat for as many pancakes as needed.

 

Filling

In a pan add grape juice, sugar, cinnamon stick and simmer

Add red wine, chopped apples and reduce till you get a thick syrupy consistency

Layer the warm pancakes with sweet yoghurt

 Top it with the filling and drizzle icing sugar, chocolate syrup and roasted nuts.
