There are plenty of states in the US that boast barbecue joints, but Texas takes the cake. It is said that while on a Texan road-trip, a true smoked-meat lover’s dilemma isn’t building an itinerary but limiting oneself to a few. From the land of true-blue barbecue, we bring you our take on the Texan BBQ Steak. An A-class steak of chicken rested in a rustic paprika-tomato marinade, is grilled to a sizzle, doused with sweet and hot barbecue sauce and served with a portion of herbed-buttered rice and roasted assorted veggies.



Chicken leg boneless - 150gms

Smoked paprika seasoning - 8gms

Garlic (chopped) - 3

Tomato paste - 10gms

Worcestershire sauce - 3gms

Soy sauce - 3gms




Roast vegetables

Carrot (triangles) - 20gms

Zucchini (triangles) - 20gms

Pumpkin (triangles) - 20gms

Basmati rice (boiled) - 120gms

Onion (chopped) - 25gms

Garlic (chopped) - 3gms

Parsley (chopped) - 1gm

Spring onion (chopped) 2gms

BBQ sauce - 20gms

Chilli flakes

Stock/water 30ml

Smoked paprika seasoning - 5gms

Tomato paste - 5gms



1. Make a marinade by mixing tomato paste, garlic, Worcestershire sauce, soy sauce, paprika, salt, pepper, oil in a bowl.

2. Thaw and clean the chicken leg (boneless), drench it in the marinade and leave overnight .

Take the marinaded cheicken and sear on a grill/hot plate and then place it in an oven and cook till done.

3.Blanch carrot slices , marinate the rest of the vegetables with garlic, salt, pepper, oil and roast in and oven till its golden.

4.Boil basmati rice and strain.

5.Heat oil in a pan, saute chopped onion, and garlic. Add brown rice, season with salt, pepper. Finish with chopped coriander and spring onion.

 6.Heat BBQ sauce and slowly add in the stock, tomato paste, paprika seasoning, and chilli flakes and stir until the right consistency is achieved.

7. Plate the food by placing tossed rice on one side,roasted vegetables on the other. Cut the chicken into three  pieces, place it on the plate and pour a generous amount of sauce on top of it.
