Meat wasn’t a part of the traditional diet of the indigenous people of Mexico – so, when the Spanish conquistadors stuffed the quesadilla with pork and beef, every bite of the quesadilla must have inspired a child-like smile on everybody’s face! We promise that our Cheesy Veggie Quesadilla will inspire a wider grin – bell pepper, red kidney beans, golden corn, jalapeño and mozzarella tossed with cumin and coriander-flavoured cheese sauce, layered on a soft sheet of tortilla that’s folded, grilled and served with freshly made salsa. The death of hunger! Whodunit? We did!
Tortilla sheet - 1
Bell pepper (julienne) - 60 gms
Onion (julienne) - 25 gms
Jalapeno (chopped) - 15 gms
Cumin powder - 5 gms
Coriander (chopped) - 2 gms
Mozzarella cheese - 45 gms
Tomato salsa - 40 gms
1. Heat oil in a pan, saute onion and bell peppers. Season with salt and pepper. Add jalapeno, cumin powder and coriander. Check seasoning.
2. Mix in mozzarella cheese. Spread evenly on half part of tortilla sheet and fold the other half. Heat the stuffed tortilla on a hot plate.
3.Now cut the tortilla into 4 even pieces and serve hot with tomato salsa on the side.
