RECIPE A DAY | QUINOA MANGO SALAD

 Salads have been and will always be the go-to meal for many after a cheat day, the guilt of consuming a burger is somehow vanquished with one healthy and savory bite.  Fresh, flavorsome and absolutely fab -- we give you the colourful and delicious Quinoa Mango salad!

Try making the salad at home, here's the magic recipe!

Ingredients

Diced English Cucumber – 50gm
Diced Red Pepper – 20gm
Diced Green Pepper – 20gm
Sliced Black Olives – 5gm
Boiled Quinoa – 40gm
Mixed Lettuce – 30gm
Firm Ripe Mango Dices – 70gm
Diced Yellow Peppers – 20gm
Salt – 1gm
Pepper – 1gm
Oregano – 1gm
Lemon Juice – 5ml
Olive Oil – 3ml

Dressing

Vinaigrette – 40gm
Salt – 1gm
Pepper – 1gm
Fresh Thyme – 3gm
Lemon Juice – 5ml

Preparation Method

Take a clean bowl and add quinoa, diced peppers, cucumber and sliced black olives.
Add mixed lettuce and toss with salt, pepper, lemon juice and add little oil.
Add firm ripe mangoes in the end.
Do not toss the salad after adding mangoes.
Season it well.

Dressing

Whisk vinaigrette with fine chopped fresh thyme.
Add lemon juice and adjust the seasoning.
