Ingredients

For base
vannila premix - 100gms
Oil - 25ml
Water - 10 ml

For piping
Mango filling (Puratos) - 10gms
whipped cream - 50 gms


For Cream filling
whipped cream - 50 gms
blue berry compote - 10 gms


For garnish
Dark chocolate - 10 gms

            Method        
                    
Prepare an eggless vanilla sponge by whipping the ingredients together and baking at 170*C for 15-20mins. Cool it to room temperature. 

                   
Whip heavy cream and mango filling together till firm.  

                 
Whip heavy cream and blueberry compote together.   

                
Layer the base sponge, soak it and apply the layer of blueberry cream mixture over it and place the next layer of sponge and soak it  

                 
Pipe the mango filling using a star nozzle.

                   
Prepare a dark chocolate triangle garnish on the textured sheet and place as shown in the picture.
